Fairmont Winnipeg GM, exec chef inducted into Chaine des Rotisseurs

WINNIPEG — Fairmont Winnipeg general manager Drew Fisher and executive chef Eraj Jayawickreme were officially inducted into the Chaîne des Rôtisseurs during a special dinner held at the Fairmont Winnipeg on Nov. 8, it was announced in mid-November.

WINNIPEG — Fairmont Winnipeg general manager Drew Fisher and executive chef Eraj Jayawickreme were officially inducted into the Chaîne des Rôtisseurs during a special dinner held at the Fairmont Winnipeg on Nov. 8, it was announced in mid-November.

For the event, Jayawickreme created an innovative menu, with each dish inspired by “a day in Manitoba.” For instance, ‘dawn’ featured ‘edible stones’ (confit potatoes, hay aioli and salmon caviar); ‘morning’ brought birch-cured arctic char; ‘afternoon’ served up lamb chop with charred aubergine purée, roasted radish and crispy garbonzo beans; and ‘evening’ featured black sesame cheesecake (black sesame fluid gel, white chocolate moss and white chocolate mousse).

The Chaîne brings together professional and non-professional members from around the world who share in the spirit of the Society and who appreciate and enjoy wine and fine dining.
