VANCOUVER, BC — Fairmont Pacific Rim is the first Canadian hotel to become a LOUIS XIII Fortress destination, serving the renowned cognac, it was announced Sept. 21.
With a blend of 1,200 eaux-de-vie aged up to 100 years from the Grande Champagne region in France, LOUIS XIII is blended in century-old casks made from Limousin oak, producing complexity with a long finish.
The LOUIS XIII Fortress magnum will take its place behind the sleek bar of The Lobby Lounge, which offers a spirits program curated by bartenders Grant Sceney.
To celebrate the cognac’s arrival, Sceney has crafted the Royal Sazerac cocktail fashioned from LOUIS XIII cognac, Peychaud bitters, lemon oil, and a salted Absinthe mist of the glass, which is served in the lobby lounge.
“We are extremely honoured to be Canada's first hotel to receive the iconic Fortress designation,” said Sceney in a release.
